How they’re made

A pupusa begins as a ball of masa. It’s opened by hand, filled with cheese, beans, pork, loroco or shrimp, sealed, then flattened between the palms and set on the comal until the outside chars and the filling turns molten.

Curtido — lightly fermented cabbage with carrot — cuts the richness, and salsa roja ties it together. It’s the national dish of El Salvador and the food we’re known for.
